Hemp Tabbouleh = Happy Tabbouleh!

Tabbouleh is a very popular Persian salad, mainly made of parsley, tomatoes and couscous.

 

Tabbouleh is also a very healthy dish.

 

Here I introduce another version of it.

 

 

Healthy detox power salad

My modifications of one of my favorite salads may  delight you. 

 

The original version is made from parsley, some mint, tomatoes, couscous, salt and white pepper. I've heard of recipes, which include shallots or onions and cucumber. In Libanon, Syria or Arabia, Tabbouleh is served on Roman salad leaves as a starter or snack or as a side dish with fish. 

 

Now see my version:

 


 

Wash and roughly plug a bunch of parsley and cut it finely until you have a large handful of it ready. Put it in a salad bowl.

 

Before all, parsley has large quantities of vitamin c along with many other great nutrients. 

 


 

This is the new guy in town:

 

Wash and roughly plug a bunch of coriander and cut until you have a small handful of it ready. 

 

Coriander is the easiest to get and cheapest herb, that helps to detox your body, so I use it for many dishes, when parsley is normally used. Please be aware that not everyone loves coriander!

 


 

Wash and plug 15 grams of mint and cut it like the other herbs.

 


 

Wash four tomatoes and cut them like shown in quarters. Get rid of the inner stuff and cut them into fine dices.

 

 

All your prepared ingredients are now in a bowl. Season all with some (stone) salt and pepper to taste and mix it, baby.

 


 

Add half a cup of hemp seed into the bowl. 

 

Hemp has lots of good nutrients like iron, magnesium, vitamin E & B1, omega-3-acids and more. 

 

I use hemp seeds as a substitute for couscous. If you prefer couscous, soak the same amount in some water or better cook it briefly on low heat.

 

 

Squeeze out one and a half lemon (8 table spoons) and add it to the bowl.

 

 

Add 3 table spoons of quality olive oil and - this is new again - one table spoon of hemp oil to the bowl.

 

Yes, the ratio lemon to oil is originally 2:1. This will create a very fresh and sour taste. If you don't like it that sour, take lemon and oil 1:1, which is 6 tablespoons each. 

 


 

Mix it all well.

 

 

Put the bowl with a plate on top  into your fridge for a couple of hours.

 

 

Serve tabbouleh chilled with some pieces of flat bread as a refreshing & healthy dish. My recipe makes two to 3 servings.
