(What's the story) morning glory ?

This is morning glory. I do not mean the highly acclaimed album of the rock band Oasis. I mean water spinach. A great veggie from Thailand prepared with a delicious & simple recipe.

The (water) spinach that everyone will love!

You may find water spinach first in Thai restaurants, where it is normally served as a simple dish like this...and it's just gorgeous!

 

In Asian groceries you may find it, too. This dish is really simple, so you can learn it quite easily, if you have some experience with Asian cooking. 

One package serves one hungry or two person. You may eat it as a warm starter or combined with rice or noodles as a main dish. 

Wash & dry your water spinach first.

Then chop it into pieces. You may get your wok with some coconut oil heated now.


Chop some red hot chilies and some garlic cloves to taste into fine pieces.

Fry the garlic and the chilies first for a couple of seconds until they begin to smell...

...then let the chopped water spinach follow.

You have to fry all just for a few minutes to get your dish ready - unbelievable, isn't it?

For the last minute of cooking, add some seasonnings like soy sauce or some hot bean sauce, if you like.

A dash of water can be helpful, too, if you think, your dish gets too dry while cooking. This way you get some more sauce.

 

If I have my water spinach with noodles, I add them boiled just before serving into the wok instead the dash of water.

Now it's all ready to go after just a couple of minutes preparation time. Enjoy the heat!
