Chinese chili oil is something I hardly can't live without, when it comes to hearty Chinese cuisine. Many gweilo Chinese restaurant only have sambal oelek and ordinary soy sauce. But a good Chinese restaurant normally has their own, home-made sauces at the tables. An undoubtable sign for a good Chinese restaurant is a large amount of guest are actually Chinese.
Making your own chili oil at home gives you the opportunity to spice it up how you want it.
Ingredients
- Dried chili flake - as hot as you like
- at least 1 pressed clove of garlic
- a teaspoon of finely cut fresh ginger
- some star anise, if you like it, because it brings a very distinct flavour and smell to the chili oil
- you may add some more ingredients like ground peanuts, if you like
- peanut oil

Instructions
- Fill the jar / the glass with ground, dried chili flakes halfway
- add the ginger stripes, the pressed garlic and the other flavours you have chosen
- fill the jar up with peanut oil
- stir everything carefully with a teaspoon
- add some more oil, if necessary, until everything is mixed well, and the jar is full
- seal the cap tightly
- put the jar into the fridge for at least one night
- stir before use
