Home-made vegan onion cake

Onion cake is a very popular, hearty dish in Germany. But I saw it's known in many other countries, too.

 

Here is my vegan version of it. This comfort food is ideal for the winter time, and brings joy to your table dining with your loved ones or friends.

Onion cake - A hearty German favourite

This vegan recipe uses my multi functional pizza dough again. This time it is put into a baking dish and filled with spiced up silken tofu. Onions and vegan cheese come on top, before it goes into the oven. This is a real feast for at least 4 people.

Ingredients

  • my pizza dough
  • 2 huge onions
  • 1 regular package of silken tofu
  • salt & pepper to taste
  • 1 teaspoon of curry powder or curcuma
  • 3 pinches of ground nutmeg
  • a glass of white wine
  • 2 handful of grated vegan cheese
  • optional: 2 slices of smoked tofu

Instructions

  • Peel the onion and cut it into rings
  • Heat some oil or vegan butter in a large pan on medium level
  • Put the onion rings in and stir from time to time
  • Cover a slightly oiled baking dish (in the size of a regular sheet of paper / letter size) with the well rolled out pizza dough. Fold down the edges hanging over the baking dish.
  • Add the white wine to the onions, stir and let them cook. Do not forget to stir from time to time.
  • Put the silken tofu into a stirring pot
  • Add the spices and mix everything well with a table spoon
  • If you opt for the smoked tofu, cut it into small dices and mix it under the silken tofu, too.
  • Heat the oven up to + 200°C
  • Fill the silken tofu into the baking dish and spread it equally
  • When the onions are cooked well and most of the liquid has boiled away, put the onions on top of the tofu filling, and spread them equally, too.
  • Spread the vegan grated cheese over the onions
  • Put the baking dish into the oven for at least 40 minutes
  • The cheese must have melted well, and the edges of the dough mustn't be too brown
  • Take out the baking tray and let the onion cake cool down for at least 5 minutes
  • Meanwhile, prepare everything for carving
  • Cut the onion cake in the baking dish into equal portions. Be careful when lifting one portion onto a plate, because the filling is rather liquid.
  • Serve & enjoy!
